Summer Crunch Poppyseed Salad

Nobody likes a boring salad – and this recipe won’t disappoint! My Poppyseed Kale Crunch salad is one of my favorites for the summertime – it’s a mix of crunchy, creamy, and slightly sweet and savory. Every time I serve it at the dinner table, I always see the bottom of the salad bowl (which is a pretty big deal since a lot of people need some convincing to eat their kale). Plus, it’s packed with superfoods and light enough to enjoy by the pool!

Before you begin prepping the salad, make sure to clean your produce with this easy produce rinse to remove any unwanted bacteria, dirt, or sneaky plant bugs. Pat the kale dry before chopping.

Start by chopping up the kale in fine pieces. We want the kale to have a crunch to it, so there’s no need to massage the kale. Do the same for the green cabbage, and radicchio. For the Brussel sprouts, make sure to peel the outside skin and chop it into halves.

For the dressing, you can make a healthier version (found in the recipe card), or you can order this pre-made poppyseed dressing that is very popular – either way, I wanted to offer both options!

  • 1 bunch Kale
  • 1 head Green Cabbage
  • 2 cups Brussel Sprouts
  • 2 cups Radicchio
  • 3/4 cup Pepitas
  • 3/4 cup Cranberries
  • Poppyseed Dressing – 1/2 teaspoon salt, 1 tablespoon honey, 2 tablespoon white vinegar, 1/4 cup plain Greek yogurt, 1 tablespoon olive oil, 1 teaspoon poppy seeds
